feat(kong): add Kong API gateway initialization script

Configures routes for all microservices:
- user-service: /api/v1/users, /api/v1/auth
- payment-service: /api/v1/payments, /api/v1/subscriptions
- knowledge-service: /api/v1/knowledge
- conversation-service: /api/v1/conversations, /api/v1/messages
- evolution-service: /api/v1/evolution
